The hum of Roy’s Waikiki Beach restaurant was in full swing. Every table in the open-style dining room was taken, a buzz of conversation floated throughout the room. In the exhibition kitchen, sous chef, line cooks and expediters swirled around executive chef Jason Peel, making the restaurant’s signature dishes, like misoyaki butterfish, braised short ribs and, of course, Roy’s ever-popular chocolate souffle.

I finally saw The Descendants, the movie starring George Clooney that’s receiving Oscar buzz. The Descendants was filmed in Hawaii. The book was penned by a Hawaii author with a storyline that could only have taken place in Hawaii. Yet, it’s still not playing on Kauai, where I live, and won’t for another week. What’s up with that? Thankfully, it is playing on Oahu and has been since the movie’s nationwide premier on November 23, and that’s where I saw it.

Did you know that Hawaii is the only state in which the cacao tree grows? Of course, you know the word--cacao. That's the necessary ingredient for chocolate! Well, here are the ingredients and the recipe for the "Original Hawaiian Chocolate Factory" Warm Cake that I mentioned in yesterday's blog post about Hukilau Lanai. I didn't say much about their desserts yesterday--and that was a travesty--but they have their own bakery. I adore the creamy goodness of their Lilikoi Chiffon pie that sits on a crust of macadamia nuts. But the husband--and you chocoholics out there--loves their chocolate cake offering. It takes 20 minutes to prepare, so order it when you receive your entree. But if you can't make it to the Hukilau Lanai restaurant this holiday season, here's a gift: their recipe.

Sandra worked the bar at Hukilau Lanai restaurant like a pianist who intimately knows the keys of her musical instrument. She reached left for one bottle, while her right hand reached right for another. She stretched her arm above her head for a wine glass. She spun behind her, opened a refrigerator hidden below the cabinet and pulled out a bottle of white wine, tugging out its cork and filling the glass. All the while, she carried on a conversation with my husband and me, sitting on two of the six, tall, teak chairs at the small bar in the open-air restaurant behind Coconut Marketplace shopping center.

It was dark until 6:41 a.m. at 22 degrees northern latitude--Kauai--when the sun finally shook off the night and rounded our side of the earth. Rain fell. Trade winds stood at attention. One dog didn’t want to get her feet wet, and so I had to drag her, back legs stiff as 2x4s, outside for the morning walk. Then, the emails started. “Anyone have a weather forecast?” “It’s lookin’ pretty stormy down this way.” “It’s definitely Kona weather, no wind here.” “Should we cancel or just go?” “Let’s forget bikes and just go. Looks like it’s clearing.”

In the Hawaii Five-0 scene, Steve McGarrett sat at a booth across from a new member of his 5-0 task force at the Waikiki diner, the Wailana Coffee House. Their verbal banter aside, McGarrett was really on a stake-out. Detectives Danny Williams and Chin Ho Kelly paced the sidewalk outside, on the corner of Ala Moana Boulevard and Ena Road, in contact with McGarrett by a wireless radio ear piece. I sit across from the booth at which McGarrett sat, long vacated by the special ops lieutenant commander, of course.

If there is such a thing as a celebrity chef in Hawaii, it’s Sam. He’s won the James Beard Foundation Best Pacific Regional Chef Award. He’s friends with Chef Emeril.
